Winter Solstice :: Easy Yule Log Recipe

It was so quick and easy and came out so well that I’m just dying to share this “recipe” for a Yule Log. Honestly I feel like I cheated and this is hardly a recipe, but this idea was born out of forgetfulness…I forgot to buy a jelly roll pan like the original recipe told me to. As it turned out, a loaf pan created exactly the right shape for a log.

Yule Will Need:

* Box Chocolate Cake Mix
* Chocolate Frosting
* White Frosting
* Green Food Coloring
* 11×4 or smaller loaf pan - 2 (or bake one cake at a time)

Prepare the cake mix as directed. Pour one half into each loaf pan and bake according to directions.

Allow cake to fully cool. You may want to do a bit of shaping of the cake before you frost. It’s up to you and depends on how the cake cooks; if so, use a sharp knife and brush off ALL crumbs before frosting.

When you like the shape, frost with chocolate frosting. Once it’s covered, drag the tip of a knife through the icing to create lines, knots and swirls that mimic the look of bark. Chill the frosted cake in the refridgerator, uncovered, until the frosting is hard.

Mix food coloring into the white frosting until you achieve a color you like for the leaves. Put the colored frosting into a plastic sandwich bag and tuck it down into one of the bottom corners. Snip the tip of the corner off with a pair of scissors and you are left with a make-shift pastry bag.

Squeeze the frosting through the small hole to draw the outline of the leaves on the top of the cake. Slow and steady creates the best lines and you may want to practice on a piece of paper first to get the hang of it.

Add as many leaves as you like, add grass around the base of the cake, add red food coloring to a bit of white frosting to create berries, etc. Decorate both logs the same or different, it’s up to you.
